How did you become an expert in sausages?
I made my first sausage back when I was a boy of about 13. I have now been making sausage recipes for the past 32 years – both while working as a chef in the restaurant trade and, for the last 19 years, here at Samworth Brothers.

What has been the most interesting project you have worked on while at Samworth Brothers?
For me, it’s been a series of projects rather than one particular project. For a number of years now we have been devising some great recipes using fresh ingredients, such as apple, onion, leek and fresh herbs.

What interesting fact about sausages can you tell us?
The first sausages were eaten by the Sumerians over 5,000 years ago.

Can you talk about any new projects you are working on?
We’re working on three initiatives: how to reduce levels of saturated fat in our pâtés; developing gluten-free sausage recipes; and looking at new ways of using meat products, in everything from party food to ready-to-cook meals.
