How did you become an expert in sausages?
I made my first sausage back when I was a boy of about 13. I have now been making sausage recipes for the past 33 years – both while working as a chef in the restaurant trade and, for the last 20 years, here at Samworth Brothers.
What has been the most interesting project you have worked on while at Samworth Brothers?
For me, it’s been a series of projects rather than one particular project. Recently we have been devising some great recipes using fresh ingredients for ready to cook meals, flexitarian sausages, meatballs and burgers.
What interesting fact about sausages can you tell us?
The first sausages were eaten by the Sumerians over 5,000 years ago.
Can you talk about any new projects you are working on?
We’re working on two initiatives: developing gluten-free sausage recipes that taste no different to current sausages and looking at new ways of using meat products, in everything from Christmas stuffings and party food to ready-to-cook meals.
